Salumist is Brian Mallon, farmer/writer/chef based in the Rocky Mountains. I spent my twenties traveling the US learning to farm and cook and preserve, in search of culture. I think I found it. Only it looked different to me than the food culture I saw in magazines and television and online -- the instagram meals and celebrity chefs and clean, bucolic farms. Seems to me there was a lot more dirt and blood hidden from view.
